Marmite & Peanut Butter American Pancakes with Caramelized Apples

INGREDIENTS:

Batter

  • 200 grams self-raising flour
  • 1.5 tablespoons baking powder
  • 1 tablespoon golden caster sugar
  • 3 large eggs beaten
  • 200 millilitres semi-skimmed milk
  • 20 grams melted butter
  • teaspoon oil for frying

Toppings

  • 3 - 4 tablespoons Marmite crunchy peanut butter
  • 25 grams butter
  • Granny Smith apples peeled cored and sliced
  • 1 teaspoon cornflour blended with 60 ml water
  • 25 grams dark soft brown sugar
  • 100 grams raspberries

METHOD:

  1. For the pancakes, mix the flour, baking powder and sugar in a mixing bowl. Whisk in the eggs, milk and butter until smooth.

  2. Heat a little oil in a non-stick frying pan and drop a large tablespoon of batter to make a round approx. 7-8cm for each pancake.

  3. Cook until underside is golden brown and small bubbles appear on the surface (1-2 mins). Turn over and cook until the other side is golden brown.

  4. Repeat until remaining batter is used up.

  5. Melt butter in saucepan, add apples and cook stirring constantly for 5-6 mins until apples are almost tender. Add cornflour and sugar and bring to a simmer for 2 mins, stirring until thickened. Stir in raspberries.

  6. Serve pancakes spread with Marmite Crunchy Peanut Butter and topped with apples and raspberries.
